Chicken Fried Rice

Craving a takeaway but want to stay on track? No problem! This dish is the perfect solution! Packed with lean protein and some healthy veggies, this is a Unislim twist on what usually is a high calorie meal. It's free on the Unislim plan at mealtimes and is something the whole family will love!

Ingredients

4 portions of cooked basmati rice, cold

6-8 cloves of garlic, crushed

1 small onion, chopped

A couple of handfuls of leftover roast chicken

4 eggs, beaten with 1 tsp of sesame oil

Couple of handfuls of mixed veggies (I used peas, sweetcorn)

4 chopped scallions

Method

In a large wok, add 1 tbsp of oil and over a high heat, stir fry the onions and garlic. Add the veggies, rice and chicken and toss well to combine. When it is piping hot, make a well in the centre and add the egg mixture. Stir until it begins to coagulate and toss it through to whole dish. Add the scallions and season well. Top with extra scallions, a sprinkle of sesame seeds and some delicious home made curry sauce
