2, thinly sliced Red onions
2, boneless/skinless Chicken breasts
200g Mixed green leaves
1/2, sliced Cucumber
3 oz Cranberry sauce
1, juiced Lime
spritz Low cal spray oil
Slice each chicken breast into four strips.
Heat a non-stick frying pan with low cal spray oil and cook the chicken until it’s beginning to turn golden/brown then, add some sliced onion and fry for 3-4 minutes.
When the mixture is fully cooked, place it in a large bowl and add the mixed greens, cucumber, dried cranberries and cranberry sauce.
Allow the mixture to set for 5 minutes then juice a lime over it. Serve and enjoy!
