1 onion, diced
2 garlic cloves, crushed
4 carrots, peeled and chopped
2 medium sweet potatoes, peeled and chopped
1.2 litres chicken stock
A handful of fresh coriander, chopped
Salt and pepper
On a medium heat, in a large saucepan, fry the onion in low cal spray for 5 minutes. Add the garlic and fry for another 1 minute. Add the sweet potato, carrot and stock. Bring to the boil and simmer for 20 minutes until the vegetables are tender.
Using a hand held blender, blitz the soup to your preferred consistency. Season with salt and pepper and stir through the chopped coriander. Optional – for a creamy texture, top with a tbsp of reduced fat crème fraiche for 0.5 Bites.per serving..
