Ingredients:

  • 2 eggs
  • 2 tbsp slimline milk
  • salt & pepper
  • low cal spray oil
  • 1/2 chopped tomato
  • 1/2 chopped green pepper
  • salsa sauce
  • 30g low fat grated cheddar
  • 2 wholewheat tortillas

Method:

Mix together the salsa with the chopped tomatoes and peppers.

In a seperate bowl whisk the eggs, milk and a dash of salt and pepper.

Heat oil in pan and add the egg mixture. Stir to scramble as it solidifies.

Line the center of tortillas with a sprinkle of cheese. Fill with fluffy scrambled egg and top with salsa mix.

Roll up burrito-style by folding bottom up and sides to center.

This works even better if you pop it into a George Foreman style grill for a few mins.
