Brazilian Sweet Potato Mashup

Ingredients

4 Sweet Potatoes

1 tbsp Sunflower oil

1 tsp Flora, for frying

1 pinch Sea salt

1 pinch Freshly ground black pepper

2 tsp Vinegar

4 Eggs

90g Feta cheese

1 Red long chilli, deseeded and chopped

Method

Serves 4 
1.5 Bites

Fill a half pan with salted water and heat until boiling

While it heats, peel and chop 2 potatoes into small chunks and add them into the pan. Let cook til tender.

Meanwhile, chop the other potatoes into very small cubes.

Heat the oil and butter in a large pan and add the cubes. Cook for 8-10 mins

Drain and mash the boiled potatoes and then add to the pan. Stir with the cubes and season with salt and pepper.

Allow pan to simmer.

Meanwhile put a pot of water to boil, then add vinegar.

Reduce the heat to simmer and stir before cracking an egg into the centre and poach for 3-4 mins.

Remove and allow drain on paper while you cook the other eggs.

Divide the potatoes among 4 plates with an egg placed on top of each.

Sprinkle the feta and chilli over each plate, with some more salt an pepper if you wish.
