300g Wholemeal flour
100g Plain flour
1 heaped tsp Bicarbonate of soda
1 tsp Salt
1.5 tbsp Treacle
1/2 tbsp Butter or oil
300ml Buttermilk
1, beaten Egg
100g Mixed Seeds (plus extra for the top)
Preheat the oven to 170 degrees Celsius
In a large bowl, add the wholemeal flour and seeds. Sift in the plain flour, salt and baking soda.
Heat the treacle with the oil or butter until warm and runny. Add it to the eggs and buttermilk and whisk until well combined.
Combine the wet and dry ingredients and pour into a lined loaf tin.
Smooth the top with clean wet fingers and sprinkle with more seeds. Press the seeds gently into make them stick, this will make the most amazing seedy crust.
Bake in a preheated oven for 1 hour. Remove from the tin and allow to cool completely on a wire wrack.
