2 bananas
2 tbsp olive oil
2 eggs
120ml water
1 tsp vanilla extract
240g wholegrain flour
2 tsp baking powder
1/2 tsp cinnamon
1/2 tsp nutmeg
Preheat baking oven at 190ºC
Beat together the mashed banana, oil, eggs and water until creamy.
Add the vanilla extract, baking powder, cinnamon and nutmeg.
Fold the mixture lightly into the flour until all ingredients are thoroughly mixed through.
Pour the batter into a lined baking tray OR you could make individual muffins.
Cook for approx 50 minutes if making in loaf tin or about 35 mins if making muffins.
To test just put a cocktail stick into the centre and if it comes out clean they’re cooked.
Makes approx 10 slices or 10-12 muffins
