4 Thin rashers, lean back bacon
1 Small tomato, deseeded and diced
4 Medium free range eggs
A few chives, snipped
Salt and freshly ground pepper
Preheat the oven to 190°C. Lightly spray a 4-hole muffin tin with oil. Line the sides of each muffin hole with a bacon rasher. wrapping it right round.
Break an egg into each muffin hole and sprinkle with diced tomato and chives. Season lightly with salt and pepper. Bake in the oven for 15 minutes or until the eggs are set and the bacon is cooked and starting to crisp. Carefully run a knife around each muffin hole and turn out the bacon and egg cups. Serve immediately with hot wholemeal buttered toast.
TIP: For the best results, use really thin bacon rashers so they crisp.
