Bacon and Cabbage

It's Ireland's famous dinner and surprisingly people's most loved home cooked meals, the humble bacon and cabbage dinner takes a slightly sophisticated upgrade with champ and parsley sauce. Give it a whirl!

Ingredients

1kg fillet or back bacon

1 head of savoy cabbage, sliced

1 large onion, sliced

4 cloves

3 or 4 Large carrots, roughly chopped

2 star anise

2 bay leaves

Method

Pop everything into a large pot, bring to the boil and allow to simmer for one hour. Serve with mashed swede, champ and parsley sauce. Check out our white sauce recipe here (allow 1 bite per portion) and simply finish a small bunch of freshly chopped parsley to complete the sauce.
