Ann’s Free Fish Pie

Ingredients:

  • 650g Mixed Fish (Salmon, Smoked Haddock & Cod)
  • 200ml Fat Free Milk
  • 150g Quark
  • 300g Fat Free Natural Yougurt
  • 2 Leeks
  • 1Tbsp Dill
  • 1Tsp Mixed herbs
  • 1Tsp Chilli Flakes
  • Salt & Pepper To taste
  • 800g Mashed Potato (no butter or cream)
  • Low Fat Butter to taste

Method:

This dish was created by Ann Hynes who eats sleeps & breaths Unislim. She has motivated hundreds of members to lose weight in the last 34 years as a leader and loves what she does – including making delicious healthy recipes!

Pre-heat the cooker to Gas Mark 6, 200°C (400°F).

Place the milk in a saucepan and poach the fish for 15 minutes – strain off and reserve the liquid.

At the same time – place the potatoes in boiling water and cook for 25 minutes. Mash the potato and set aside for later.

Next, mix together the Quark, yogurt, herbs and seasoning in a pan and gently heat. Add in the fish and the reserved milk and cook on a low heat for 5 minutes.

In another pan, fry the leeks with low cal spray oil. When cooked add the fish mixture and stir in well. Check the seasoning at this point and adjust it as necessary. To finish, squeeze in lemon juice.

Place the mixture into a casserole dish and top with mash.

Bake in the oven for 20 minutes or until the top is lightly browned.

For an extra bite you can add 60 g cheese to sprinkle on top = .5 of bite per person.
