240g noodles
15g basil
15g corriander
50g peanuts, unsalted
1 red chili, de-seeded & chopped
1 lime, zest & juice
1 tbsp sesame oil
2 tsp olive oil
low cal spray oil
400g king prawns
To make the pesto, put the basil, coriander, lime, peanuts, chilli, sesame oil, olive oil, 2 tbsp water and a pinch of salt into a food processor and blitz.
Cook the noodles as per packet instructions.
Heat pan with low cal spray oil and fry the prawns for 3-4 minutes, then stir in the pesto. Add the noodles and stir until they are completely coated in pesto.
For extra flavour and crunch cut red pepper and cucumber into thin strips, toss in a bowl and add some fresh bean sprouts. Place a small handful of this on top of the prawns and noodles.
