Fakeaway Masala Chicken Skewers

Ingredients

150ml 0% fat Greek yogurt

2tbsp masala paste (Pataks Tikka Masala Spice Paste) available in Tesco

Handful of coriander leaves - chopped

A few sprigs of coriander leaves to serve

Juice of 1 lime

Pinch of lime zest

Lime wedges to serve

4 Skinless, boneless chicken breasts cut into 6 chunks

100g Gorge Us Sweet Potato Fries

1 cucumber finely sliced

2 medium tomatoes finely sliced

1 handful parsley

Method

Preheat to 180 – 200°C (gas mark 4/5).

Marinate the chicken for 30 minutes in large bowl with yogurt, half the lime juice, paste, half the chopped coriander and all the lemon zest.

Put the Sweet Potato Fries on a baking tray spaced evenly apart and place in the oven to cook for 25 minutes.

Mix the salad ingredients together with the remaining lime juice and coriander in a bowl.

Meanwhile, thread the chicken onto 8 skewers and cook on a griddle pan, at a hot heat for about 10-12 minutes. Ensure the chicken is cooked through.

Once the Gorge Us Sweet Potato Fries are cooked, serve immediately with the chicken and salad.
