Method

Ingredients:

  • 400g (100g each) Gorge Us oven chips
  • 1 slice x 30g wholemeal bread, blended to breadcrumbs
  • zest of 1 lemon
  • 2 tbsp Chopped flat-leaf parsley
  • 4 White fish fillets
  • 400g Cherry tomatoes
  • 1 Egg - whisked
  • 2 tbsp Lighter Than Light Mayonnaise
  • 1 tsp Tomato Puree
  • Lemon Juice

Method:

Heat oven to 180C/gas 7. Place your chips in a single layer on a large baking tray.

Cook for 40 mins until golden and crispy.

Mix the breadcrumbs with the lemon zest and parsley, then season well. Slice your fish into goujon strips, dip into a whisked egg and then coat evenly with the breadcrumb mixture.

Bake in the oven for the final 10 mins of the chips’ cooking time, or until golden.

Dipping Sauce:  Mix some lighter than light mayonnaise with 1 tbsp of tomato puree, along with a squeeze of lemon
