Ingredients

2 Chicken Breasts

3 Garlic Cloves, minced

1 Spring Onion

2 Sliced Peppers

120g Basmati Rice (uncooked weight)

60g Cashew Nuts (optional)

Low Cal Spray Oil

1 tbsp Soy Sauce

Method

Using low cal spray oil, fry off the chicken breast strips. When the chicken begins to turn golden, add minced garlic, julienned spring onions, sliced peppers and some blanched brocolli florets.

For extra heat, add some thinly sliced fresh chilli. Add the soy sauce.

Serve with Basmati rice.

Top with roasted and crushed cashew nuts (60g).
