Cheesy Onion Rings

Ingredients

4 tbsp Ground flax seeds

1 Vidalia onion

3 tbsp Parmesan, reduced fat and grated

1 Egg white

Method

Serves 2 
0.5 Bites per portion 

Chop off top and bottom of onion and peel off skin.
Turn the onion to the side, slice into roughly 10 rings.
 Crack open egg into bowl and separate egg white.
Combine Flax and Parmesan in a bowl and mix.

Dip onion slices into egg white. Coat the dipped onion in the flax mixture.

Spray large pan with low cal oil and heat over medium heat.

When oil is hot, add coated onions to the pan.

Cook both sides until golden brown. After removing from the frying pan, add onions to paper towel to crisp.

Serve 5 rings to each person and season with salt, pepper and vinegar.
